Fine dining Shikai Maki sushi are made to celebrate special occasions. The history of wrapped sushi rolls, or maki sushi goes back to the vegetarian cookery that evolved in 13th century Kyoto temples. Buddhist monks there lived ascetics lives of piety, austerity, and rigid discipline, however, they were not against a fine meal. These Buddhist monks further created this technique of wrapping or rolling ingredients in sheets of dried seaweed. This elaborated classic recipe is artistically handworked to look fancy and impressive. The four curved bands of nori (seaweed) look like ocean waves coming from four seas directions (shikai)
